WHY DO WE FEEL ICECREAM SWEET, SMOOTH AND COLD?

Receptors in your tongue's surface detectes taste and they pick up the sweetness of the icecream. Touch receptor detects the icecream's smooth texture, and other receptors sense how cold it is. They all send signals to your brain, which allows you to feel sweet, smooth and cold sensations.
